Introduction
Niigata/Echigo is a region where the craftsmanship of Echigo chief brewers and the polishing of high-quality sake rice, such as Gohyakumangoku, are intersected on top of this blessed climate: clear water from the melting snow of the Shinano and Agano rivers, and low-temperature fermentation fostered by long winters. The town, which stretches from Niigata Station to Furumachi and Nuttari, is dotted with white-walled storehouses and red brick buildings, and welcomes travelers with wells for brewing water and sake breweries directly operated by breweries.
The scent of moromi on the wind, the cedar balls swaying in front of the eaves, and the memories of the Kitamaebune business that follow beneath your feet – this journey is a story that you can enjoy with all five senses, as the nature of the snowy country and the wisdom of the Echigo brewer blend together as you drink more and more cups. Now, let’s go to the heart of the sake region and paint a tanrei dry note.

1. What is the sake you can enjoy in Niigata and Echigo?
1 | What sake to enjoy in Niigata and Echigo

Niigata’s sake is born from the blessings of this snowy country. Soft water polished by melting snow, and a long cold winter. The clear brewing water that does not give off unpleasant tastes and the climate that is suitable for slow fermentation fosters a clean, crisp flavor.
The star sake rice “Gohyakumangoku” was also born in Niigata. It is polished to the center of the grain, has an elegant aroma, and has a sharp aftertaste. He is a key player in expanding the image of so-called “tanrei dry Niigata sake.”
Recently, efforts have been made to label the country of origin, and careful research and human resource development are also active. Thanks to this foundation, where traditional techniques are supported by the latest knowledge, Niigata’s sake continues to evolve neatly and deliciously to this day.
2 | A day on foot exploring white walls and river breezes (around Niigata Station)

When you arrive at Niigata Station, first take a detour to Ponshukan, which is directly connected to the station. With coins in hand, sample some of the prefecture’s famous sake and compare. As soon as I arrived, I was completely in Niigata mode.
Once you’ve warmed up, take a walk from the station to Imayoro Tsukasa Sake Brewery. This is a rare working sake brewery that you can walk to in the middle of town. Surrounded by aromas on a tour of the brewery and discover your tastes through tastings – your taste buds will be awakened by your travels.
In the afternoon, head to the Nuttari area. Take a leisurely stroll through Nuttari Terrace Shopping Street, a renovated old market building, while enjoying a cafe or a snack. It’s a pleasant street that blends Showa retro and modern times.
The last stop is Bandai Bridge, which spans the Shinano River. Enjoy the sunset and enjoy the river breeze as you cross the beautiful curved bridge. White walls, cedar balls, and the city of water—the views of the day all flow together into one.
3 | “Tradition x Innovation”—The story of a sake production area that continues into the future

At the beginning of spring, sake lovers in Niigata get excited about Niigata Sake no Jin. Breweries from all over the prefecture come together, and you can try out one bottle after another. It’s a festival that will bring smiles to both beginners and experts alike.
Behind the scenes, research institutes and universities support research into yeast and sake rice, and the learning of producers. The careful craftsmanship of Niigata is accompanied by a scientific eye, giving Niigata’s sake a timeless yet new quality that is reliable.

3. “Recommended Sake Selection” from Niigata and Echigo
Niigata, which is close to both the ocean and the mountains, is a “kingdom of food-drinking sake” blessed with soft water polished by melting snow. The area is famous for producing “Gohyakumangoku” sake rice, and has cultivated the elegant and sharp “Niigata Tanrei” style. Furthermore, the prefecture’s unique sake rice “Etsudanrei” has also appeared, and each brewery is producing one after another, with its lightness and fullness. Here, we will introduce representative brands that are packed with brewery philosophy and that you should try first, categorized by use.
1. Hakkai Jozo (Hakkaisan Special Honjozo)|Minamiuonuma City/Nagamori (Uonuma Village)
Exhibition: https://www.hakkaisan.co.jp/
Beautiful sharpness with a soft texture. As it cools, its outline becomes clearer, allowing the flavor of the rice and light acidity to pass through easily. When warmed, the aroma spreads gently, and the sweetness of soup stock and simmered dishes is elegantly enhanced. Even when cooking with oil, it doesn’t leave a heavy aftertaste, and it accompanies the meal from start to finish.
Because it is a classic, it has a deep pocket, and its range is vast, including tempura, hot pot, grilled fish, and ohitashi. It’s a reliable “household item” that you reach for naturally from the refrigerator when you’re in doubt.

|---|---|
| type | Special Honjozo |
| taste | Refreshing and light/soft taste |
| How to drink | Cold sake ◎ / Room temperature ○ / Warm ◎ |
| Compatible dishes | Salt-grilled Nodoguro, tempura, yosenabe, wild vegetable ohitashi |
| Where can I buy/drink it? | Uonuma no Sato “Sennen Kojiya”, prefecture special store, Ponshukan (Niigata Station), etc. |
2. Asahi Sake Brewery〈Kubota Senju Junmai Ginjo〉
Exhibition: https://www.asahi-shuzo.co.jp/
It has a quiet scent and a neat sharpness. When cooled, it has a clear texture that enhances the delicate sweetness of white fish and sushi without disturbing it. As the temperature rises a little, the flavor of the rice loosens, and the aftertaste is smooth and dry.
It goes well with dishes that have good seasonings, such as yuzu, ginger, lemon, and a small amount of butter, and is an excellent choice that won’t disturb the table whether you place it in Japanese, Western, or Chinese cuisine. The type that you can place at the center of your everyday dining table, and the more you drink the glass, the more the goodness will gradually come out.
| item | Content |
|---|---|
| type | Junmai Ginjo (50% koji rice/55% kakemai rice polishing design) |
| taste | Neat sharpness/gentle scent/good balance |
| How to drink | Cold sake ◎ / Room temperature ○ |
| Compatible dishes | Sushi/sashimi, white fish meuniere, pork shabu, chicken nanban |
| Where can I buy/drink it? | “Sake Raku no Sato Asahiyama” (directly managed), prefecture special store, Ponshukan, etc. |
3. Ishimoto Sake Brewery〈Koshino Kanbai Junmai Ginjo Sai〉
Exhibition: https://koshinokanbai.co.jp/
The aroma is modest and the taste is pure. From the first sip, it slides smoothly down your throat, and the aftertaste disappears without a sound. It doesn’t destroy the umami layer of dashi, kelp, or white soy sauce, so it overlaps surprisingly naturally with the delicate sweetness of simmered dishes and bowls. It goes well with the salty scent of the seafood and the gentle sweetness of the dashimaki egg. You can also enjoy the “dual nature” of the rice, where the minerality becomes more pronounced when it is cooled, and the roundness of the rice becomes more apparent when the temperature rises. It’s a balancer that sits quietly alongside your food, resetting your palate after a meal and inviting you to the next bite.
| item | Content |
|---|---|
| type | Junmai Ginjo (milled rice 55%) |
| taste | Gentle Ginjo incense/light and pure |
| How to drink | Cold sake ◎/Hanachire○ |
| Compatible dishes | Boiled flatfish, dashimaki, kobako crab, camembert |
| Where can I buy/drink it? | Official online, special store in the prefecture |
4. Kikusui Sake Brewery (Funaguchi Kikusui Ichiban Shibori)
Exhibition: https://www.kikusui-sake.com/
The fresh scent the moment you open the can, the thickness that makes you feel good when you put it in your mouth – a bottle that conveys the pleasure of “freshly squeezed”. Since it is not pasteurized or added with water, it has a fruit-like juiciness and richness, but the aftertaste is surprisingly light. If you let it cool down, the outline will firm up, and it won’t fall apart even if you put ice on it and put it on the rocks. It can stand up to punchy flavors such as fried chicken, teriyaki, pizza, and cheese, and is extremely satisfying as a “reward tin” for outdoor activities or drinking at home. We also recommend pouring it into small glasses and slowly enjoying the aroma and temperature change.
| item | Content |
|---|---|
| type | Raw sake (can)/19% alcohol |
| taste | Fresh & Rich/Juicy |
| How to drink | Chill well (either in a can or in a glass) |
| Compatible dishes | Fried chicken, teriyaki chicken, pizza, cheese snacks |
| Where can I buy/drink it? | Kikusui directly managed shops, prefecture mass retailers/special stores, Ponshukan, etc. |
5. Imayo Tsukasa Sake Brewery〈IMA Sake for Oysters (Junmai)〉
Exhibition: https://www.imayotsukasa.com/
As the name suggests, this bottle is designed to help you enjoy delicious oysters. It is low in alcohol and has a light taste, and the refreshing acid derived from malic acid goes perfectly with the minerality of the shellfish. If you’re eating raw oysters, use this alcohol instead of lemon, and if you’re frying oysters, it will drain the oil quickly, creating a rhythm that will make you want the next bite.
When poured into a wine glass, the fruitiness opens up, and it blends seamlessly into white wine dishes such as appetizers, carpaccio, and caprese made with herbs and citrus. It’s a new addition to your fridge that you’ll want to keep on hand as your seafood companion.
| item | Content |
|---|---|
| type | Junmaishu (rice polishing ratio 65%/Alc. 12%) |
| taste | Refreshingly sweet and sour and juicy |
| How to drink | Cold sake◎ (wine glass recommended) |
| Compatible dishes | Raw oysters, fried oysters, carpaccio, caprese |
| Where can I buy/drink it? | Tsukasa Imayo direct sales store/official online, prefecture special store, Ponshukan |
6. Yoshinogawa (Gokujo Yoshinogawa Ginjo)
Exhibition: https://sake-yoshinogawa.shop/
A clear aroma, a smooth mouthfeel, and a clean dry aftertaste – a classic that embodies the essence of “Niigata Ginjo”. When cooled, a refreshing aroma emerges, and at room temperature, the flavor spreads quietly. It goes well with seafood, of course, but also with the smoothness of hegi soba, the flavor of kombujime, and the light sweetness of chilled yakko.
It gently pushes out low-fat dishes and adjusts the seasoning. It’s easy to recommend even to first-timers, and if you keep it on hand, you’ll feel confident that it goes with anything today.

4. “Model course” that tours Niigata/Echigo and sake breweries
Starting from JR Niigata Station, Niigata’s strength lies in its abundance of sake drinking spots that can be visited on foot, both inside the station and in the town. After making your debut with sake at Ponshukan, which is directly connected to the station, we took a walk to Imayoshi Sake Brewery in the middle of town. Take a breather on the Nuttari Terrace, a renovated retro market, and soak up the breeze at the Bandai Bridge over the Shinano River, making your “Niigata Sake Time” all the same, even if it’s only for half a day.
If you have an extra day to spare, take the JR train to Kaetsu no Kura in the afternoon and take a full-scale tour of the brewery. Transportation is mostly by train, so you can enjoy tasting without worrying about the driver.
①|Half-day course to enjoy the breeze of the port town and the scent of storehouses (around Niigata Station)

Water polished by snow and cedar balls swaying in the white-walled storehouse. From the river breeze blowing along the Shinano River, to the alleys in the town, to the mountains beyond the countryside, Niigata’s landscapes are always filled with hints of sake. Clear, neat, and sometimes plump. The craftsmanship of the Echigo toji and the rice and water of Niigata combine to create a cup that is quietly imbued with the four seasons and the rhythm of life in this region.
Every time you drink a glass, the purity of the melting snow, the blessings of the sea and fields, and the tenacious passion of the brewers emerge as a gentle aftertaste – that is the real pleasure of Niigata, the place where sake is produced. May today’s journey be an encounter with your favorite bottle that will accompany your daily dining table. The next time you visit, a different look of Niigata sake will be waiting for you.
