Sake in Tsuruoka: An Introduction
1 | Sacred Sake Born from Mt. Gassan Spring Water and Shonai Rice

The ultra-soft water from sacred Mt. Gassan contains 39 mg/L of silica, earning it the nickname “beauty water.” Takenortsuyu’s “Hakuro Suishu” is brewed using this subterranean spring water together with indigenous yeast from the Dewa Sanzan region to create a “fully fermented sake” that achieves both clarity and mineral character. Kamenoi Shuzo, with its brewery also in Haguro-machi, further refines the source water into ultra-soft water to brew junmai daiginjo with extreme rice polishing (down to 11%!), achieving vibrant fruit aromas and a delicate touch under their “Kudoki Jozu” brand.
When combined with Shonai Plain’s sake rice varieties “Dewa Sansan” and “Yuki Megami,” the result is the Dewa Sanzan terroir — a signature softness derived from the water married with the umami of the rice.
2 | Exploring Breweries and Mountain Worship by Bus & Rental Bicycle

Start your morning by taking the Shonai Kotsu bus from Tsuruoka Station to the Zuishinmon Gate of Mt. Haguro (approx. 40 minutes). After visiting the Five-Story Pagoda and Sanjin Gosaiden, enjoy shojin ryori (Buddhist vegetarian cuisine) in the temple town, then head down to the Oyama district by e-bike or local bus. The Oyama Shinshu Sakagura Matsuri (New Sake & Brewery Festival, held Feb. 22, 2025) is a winter highlight where you can walk between the “four breweries” — Haneda, Watarai Honten, Fuji, and Kato Kahachiro — tasting freshly pressed sake along the way.
In early summer (June 14-15), the Local Sake Festival at Shonai Kanko Bussankan offers all-you-can-drink access to about 80 varieties from 17 Shonai breweries — perfect for those not driving who can taxi-hop between spots. Since buses run right up to the breweries, a popular route is to taste and then check in at a Yunohama Onsen inn with a shuttle service, worry-free.
3 | The Four Oyama Breweries’ Fermentation Symphony — Yuki Megami and “GI Shonai”

Oyama flourished as a Shogunate-controlled “tenryo” territory during the Edo period, with the entire town building the “Oyama Sake” brand together. Today, four breweries — Haneda (Uzen Shiraume), Watarai Honten (Dewa no Yuki), Fuji Shuzo (Eiko Fuji), and Kato Kahachiro (Oyama) — continue their technical exchanges, incorporating the latest methods such as the prefecture-developed sake rice Yuki Megami and low-temperature centrifugal separation, while refining a shared style of “rich-yet-clean flavor with vibrant ginjo aroma.”
In 2024, GI Shonai (Geographical Indication) was enacted, granting international protection to sake brewed with Mt. Gassan water and Shonai rice. Truly, “innovation born from sacred mountains” is underway.
