Introduction
In the old townscape of Takayama, at the foot of the snow-capped Northern Alps, there are seven sake breweries and townhouses that reflect the atmosphere of the Edo period. While enjoying the “Hida Sake” made from ultra-soft underground water and Gifu-born sake rice (Hidahomare), you can tour the bustle of the morning market, the historical site of the magistrate’s office (Takayama Jinya), and even the steam of the hot spring town in one stroke.

When you put it in your mouth, Hida’s sake swells with the flavor of the rice, and it cuts right down your throat — it has both a richness and a sharpness. There are three keys. First of all, it is super soft water that has been filtered underground for many years from the melting snow of the Northern Alps. The hardness of Takayama City’s main water source, Miyagawa, is 16 mg/L, one of the softest in Japan, allowing for gentle fermentation and a silky smooth texture.
The second is Hidahomare, a sake rice grown in Gifu Prefecture. It has large grains, low protein, and has a large heart, and even with 60% polished rice, it can bring out the flavor without any unpleasant tastes, so Hida no Kura has achieved a quality that can be easily enjoyed even in the Junmai Ginjo class.
Thirdly, the prefecture’s unique G yeast/G2 yeast. A derivative of the No. 9 series, it produces three times the amount of ethyl caproate compared to conventional products.It brings a gorgeous aroma reminiscent of apples, pears, and white grapes, while having a light aftertaste.
In this way, Hida sake, which has the “triple signature” of water, rice, and yeast, has been receiving a lot of awards in recent years, such as Tenryo Sake Brewery in Minami Hida winning consecutive gold medals at the 2025 National New Sake Awards.
2 | Half-day tour of old townscapes and “Shichikura” sake tasting pass

In the morning, I stuffed myself with miso dango at the Miyagawa morning market, crossed the vermilion-lacquered Nakahashi Bridge, and headed for the old streets of Sanmachisuji. After picking up a “Hida Takayama Sake Drink Book” (3,000 yen) at the tourist information center in front of Takayama Station, head to the oldest Hirase Sake Brewery when it opens at 10 a.m. – start your day with the soft aroma of “Kusutama” ginjo sake.
Afterwards, we strolled through Kamisannomachi, enjoying the refreshing dry “Dashi” from Harada Sake Brewery, a magnolia miso lunch and “Miyama Kiku” at Funasaka Sake Brewery, and in the afternoon tasted aged sake from Hirata Sake Brewery “Hisagi”, Niki Sake Brewery “Himuro”, and Kawajiri Sake Brewery, and finished off at Oita Sake Brewery “Oni Koroshi”. Once the stamp book is full, go to the lottery in Takayama Jinya-mae Square. Peeking out at the Yatai Kaikan in the evening light, and returning to the inn on the Takumi Bus, the scent of wood and sake will leave a lasting impression on your heart from your half-day trip.

The culture of “oraga sake” poured by brewers themselves and the townscape preservation movement are working together to enhance the brand power of “ancient capital x local sake.”

2. “Recommended Sake Breweries” in the old townscape and Hida Sake Brewery
Melting snow from the Northern Alps is filtered underground over many years, turning into ultra-soft water (Miyagawa underground water) with a hardness of around 16 mg/L that gushes into the well. By combining Hidahomare, a sake rice grown in Gifu Prefecture, with G2 yeast, which produces an apple-like aroma, “Hida Sake” is brewed, which has both the flavor of rice and the sharpness of the rice.

overviewFounded in 1623, the current storehouse was rebuilt in 1923. Twelve storehouses are lined up at the foot of Shiroyama overlooking Takayama Castle, and as you pass under the cedar ball, you will be greeted by a traditional structure with beams and drum bridges. Kusudama, a pure rice daiginjo made with Hidahomare polished to 40%, has a citrus and white peach ginjo aroma and a silky texture.
It is a regular winner of awards at the National New Sake Appraisal and has even released a commemorative sake commemorating its 400th anniversary. Guided tours (six times a day, reservations required) take you from the koji room to the upper tank, where you can taste and compare over 20 types of sake.

Founded in 1855. We preserve the “Okuden Hida-ryu Midwinter and Cold Construction” in the townhouse storehouse in Kamisannomachi, an Important Preservation District for Groups of Traditional Buildings. Separated from cherry blossoms and begoniasflower yeastThis is a pioneering brewery that uses “dashi”, and its signature brand, “Dashi”, is characterized by its melon-like ginjo aroma and the balance of sharp flavor and spiciness. Inside the brewery, there is also a bar where you can enjoy all-you-can-drink sake for 380 yen, and a cafe that serves local sake pudding and Daiginjo soft drinks.
Outside of the preparation period, you can freely tour the tank area and take home the choko you used for tasting as a souvenir.

Founded in 1703. It is a complex facility that brings together a brewery, a shop, a sake bar, and a restaurant (Aji no Yohei) in the center of an old townscape, and bills itself as a “sake theme park” where you can enjoy “seeing, drinking, and eating.” The representative brand, Miyama Kiku, has a harmonious apple aroma derived from G yeast and a spicy aftertaste.
The Daiginjo “Four Stars” series won an award at the National New Sake Awards in 2019. On a guided tour (reservation required), you can take a close look at the koji room, and after tasting 5 different types, you can enjoy a pairing dish of Hoha miso and Hida beef.

A family business founded in 1695 and continued for 16 generations. “The only ginjo brewery in Hida”Optimized for Ginjo brewing, from brewing water to temperature control. The signboard, Himuro, is a pioneer in freshly squeezed raw sake, and is popular for its fruity ginjo aroma and sharp crispness.
There are also a wide variety of seasonal limited edition items, such as Daiginjo H TAMANOI, which is made by polishing Hidahomare to 50%, and you can sample 5 to 8 types at the store for a fee (starting at 150 yen). Inside the brewery, there is an exhibition space where seasonal flower mochi and doll decorations shine, allowing you to experience machiya culture and sake brewing at the same time.
