Towada Bara-yaki is the soul food of Towada City, Aomori Prefecture, said to have originated at a food stall in front of the Misawa US military base about 50 years ago. The dish features beef rib meat and plenty of onions seasoned with a sweet and savory soy sauce-based sauce, grilled on an iron plate. As a representative local gourmet dish of Aomori Prefecture, it is beloved at many restaurants in Towada City.

History of Towada Bara-yaki

Towada Bara-yaki was born at a food stall in front of the Misawa US military base about 50 years ago and subsequently spread throughout Towada City. As part of a project to revitalize the region, the Towada Bara-yaki Seminar was established in 2008, and the dish has been promoted throughout the community. Through collaboration between Towada City, the Chamber of Commerce, and others, this citizen-rooted dish has been used to promote regional revitalization and is now a representative soul food of Towada City.

It is a local gourmet dish that Aomori Prefecture takes pride in, having won the B-1 Grand Prix in 2014. In Towada City, it is served at over 80 restaurants and is also enjoyed as a home-cooked dish.

The first restaurant to serve this style is said to be “Mimasu,” after which the dish was trademarked as “Original Tsuyu Yakisoba” and became widely accepted locally.

Over time, Tsuyu Yakisoba has gained nationwide recognition as a representative B-class gourmet dish of Aomori Prefecture, with many restaurants serving the dish with their own unique recipes. The history of this dish symbolizes the region’s food culture and plays an important role in the society and culture of Kuroishi City, Aomori Prefecture.

In contrast, “Mimasu,” considered another place of origin for Tsuyu Yakisoba, used soba broth.
    Tsuyu Yakisoba uses thick flat noodles unique to Kuroishi, with a seafood-flavored broth made by adding ramen dashi to sauce, featuring a well-balanced mix of pork, cabbage, onion, carrot, green pepper, and bean sprouts. Green onion and tempura crumbs are added as toppings. The dish is reasonably priced at 650 yen, and the menu also includes other noodle dishes and rice bowls.
    The interior of Myoko Shokudo features a large kite decorated with a striking Nebuta painting on the ceiling, reportedly painted by the proprietress herself. The restaurant is bustling with local regulars including families, and its homey atmosphere is one of its charms.
