Located just a 5-minute walk from Fujisan Hongu Sengen Taisha, the brewery uses Wakutama Pond underground spring water (ultra-soft, hardness 20 mg/L) — the same source that flows through the shrine grounds. While preserving the traditional yamahai brewing method, they draw out elegant ginjo aromas using prefecture-developed yeast.
Tours run on a walk-in basis from 10:30 AM to 3:30 PM, last approximately 45 minutes, and are free (reservation required). In 2012, the entire brewery relocated to the Asagiri Plateau (elevation 900 m), equipping the facility within Asagiri Food Park with state-of-the-art equipment and glass-walled viewing corridors. “Fujimasa Junmai Ginjo Homarefuji,” brewed with the plateau’s crisp air and Mt. Fuji underground spring water, features Shizuoka yeast-derived fruity aroma and clean finish.
Inside the facility, you can freely observe the brewing vats (no reservation needed, free), and there is a full lineup of sake sweets including new sake tastings, sake soft-serve ice cream, and amazake latte.
